Colombia Deiro Garcia Wush Wush Anaerobic Washed

Deiro Garcia is one of the most innovative coffee producers in the Huila region of southern Colombia. He named his farm in the Pitalito area Lord Voldemort because he is a big Harry Potter fan.

However, not only the name of the farm is unusual, but also his approach to coffee processing. Deiro has been experimenting with fermentation for several years, conducting numerous tests with exceptional results and developing his own coffee processing methods right on his farm. He took microbiology courses where he discovered that different types of bacteria and yeasts can create distinct coffee flavour profiles. He therefore started cultivating his own cultures of bacteria and yeasts using enzymes from fruits and vegetables.
