Colombia Nestor Lasso Anaerobic Washed

Néstor Lasso is one of the prominent producers of current specialty coffee in Colombia. Together with his brother Adrián and producer Jhoan Vergara, he is behind the El Diviso farm in the Bruselas region of Huila. Their family has been involved in coffee for several generations, but Néstor has gradually focused primarily on experimental processing, fermentation, and working with less common varieties.

El Diviso is a farm of approximately 15 hectares, located at a high altitude of around 1,850 meters above sea level. Néstor cultivates several varieties here, including Java, Typica, Ombligon, Bourbon Ají, Chiroso, Sidra, and Geisha. The combination of high altitude, varietal diversity, and emphasis on precise processing is characteristic of coffees from El Diviso.

Néstor began experimenting with fermentation even when most of the production in the region still relied on more traditional processing methods. He gradually developed a range of his own fermentation procedures, aiming to best preserve and develop the character of individual varieties. An important part of his work is controlling each step of the process – from selecting ripe cherries to fermentation and drying.
